You asked, and I am answering. Many of you seemed so interested in what was actually on my monthly menu a few weeks ago, so I thought I’d share it with you. I’m going to add this as a page on the top of my blog later for easy access.
I love looking at other people’s menus, because the truth is, sometimes inspiration is seriously low. I put together this meal plan earlier this month with the help of my sweet girls. It’s a pretty balanced combination of meals for easy nights, and meals for nights where you can linger a bit in the kitchen. I’ve included an image of the meals, a google docs document link so you can print it if you’d like, as well as links to any of the recipes I have found online. I hope this helps you with some ideas! I’ll plan to update it from time to time.
Also, I typically only cook about five times a week. We eat out one night on the weekends, and Luke usually cooks something another night. That’s why for me, a month of meals equals 20 meals.

Pepperoni Pizza Roll (I don’t follow a recipe, but if I did this is very close to what I do)
Corn Cakes w/ Goat Cheese (I added flour to the batter to thicken it, and doubled the recipe to feed my family, adding in more zucchini than corn)
Creamy Fusilli with Yellow Squash (my kids LOVE this one!!!)
Pork (Chicken) with Apples & Greens (recipe calls for pork, I use chicken)
Salmon with Balsamic Glaze (I copied this down at a friend’s house, but this is basically it)
Spinach Mac n Cheese (Amaleah begs for no spinach, but I think it’s a great way to get spinach in)
Chicken Azteca (a great crockpot recipe)
Chicken Fried Steak (a true comfort food)
Beef Stew (mine is from the Pioneer Woman cookbook, her second one, but this looks close)
