I feel kind of shallow and disloyal, but I have a new best friend. It may surprise you due to my recent conversations on friendship, but a girl’s gotta do what a girl’s gotta do. Let me introduce you….
Seriously, I know this is not a modern invention, and I’m absolutely not the first person to discover this convenience, but it is what it is…
I’m obsessed with freezing things in the shape of a muffin…Currently in my freezer are bags of muffin shaped quiche, macaroni and cheese, muffins, marinara sauce, and breakfast casserole. Future ideas include chili, sloppy joe’s, any leftover pasta dishes, soup, the possibilities are endless!
Why in the world do I do this, and how?
Because a muffin shaped anything fits perfectly into a thermos for the kids school.
Here’s how it works.
1) Cook your anything
2) Spray nonstick cooking spray in muffin tins (or grease with your preferred greaser)
3) Fill muffin tins
4) Place in freezer and freeze til firm…a couple of hours or overnight if you forget about it (like me)
5) Remove from freezer and shift the tins a bit like you would an ice tray; take a butter knife and gently loosen the item and pop out.
6) Place items side by side in a large freezer bag, or in a large container and layer with wax paper, and pop into the freezer for safe keeping.
7) and your done!
For school lunches I simply remove what I need the night before and place it in a bowl in the refrigerator. In the morning I heat it up and dump it into a thermos and voila! Lunch is ready.
*I’ve only made two sandwiches this whole school year so far.
